Graduation Cookies May 19, 2010

Recently, My older brother graduated from UNC-Chapel Hill. I wanted to do something special because we were having family over to celebrate. I got the idea for the cap shaped cookies from A Southern Season, a local cooking store in Chapel Hill. I decided to make the cookies from scratch and use my own icing. This was a good chance to practice decorating.

Ingredients

3/4 cup shortening

1 cup sugar

 2 eggs

1 tsp. vanilla extract

2 1/2 cups all purpose flour

1 tsp. baking powder

1 tsp. salt.

Mix shortening, sugar, eggs, and flavoring thoroughly. Measure flour by sifting. Stir flour, baking powder, and salt together; blend in. Chill at least 1 hour. Heat oven to 400 degrees. Roll dough 1/8″ think on lightly floured board. Trace stensil and place on ungreased cookie sheet. Bake 6-8 minutes, or until golden.

Icing

1 lb. confectioner’s sugar-sifted

3 egg whites

1/2 tsp. cream of tartar

blue food coloring

Place sugar in deep bowl add egg whites and cream of tartar. Beat well. As you beat the icing, it will become firmer.
